1/4 C Crumbled Blue Cheese (or Feta Cheese)
1/4 Sour Cream (no fat or use Plain Yogurt or Tofu)
1/4 teaspoon Celery seed
1/4 teaspoon Worcestershire sauce
4 boneless skinless chicken breast halves
4 Tablespoons Buffalo Wing Sauce (Watch out for Glutamates!)
4 whole wheat kaiser rolls, split (look in Walmarts Bakery Section, Artisian Breads!)
Heat Grill.Â In small bowl, combine cheese, sour cream, celery seed and Worcestershire sauce; blend well.Â Set aside.
Flatten out chicken halves by placing meat between two pieces of wax paper and pounding with medium force using a wooded mallet or rolling pin.
When ready to grill, brush each chicken side with Wing Sauce.Â Place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals.Â Cook 10 to 12 minutes or until chicken is fork-tender and juices run clear, turning once.
During last 2 minutes of cooking time, place the Whole Wheat Kaiser Rolls, cut side down, on grill; cook 1 to 2 minutes or until golden brown.
To serve, place grilled chicken on bottom halves of rolls.Â Top each with cheese mixture.Â Cover with top halves of rolls.
Accompany these sandwiches with Carrot chips and Celery sticks, Water Chestnuts are nice and crunchy as well!
